Greensand Bray Cheese
This is a hard, cheddar type cheese which we named after the Greensand way that runs through our farm. It is matured traditionally, bound in butter-soaked muslin to prevent the wheels from drying out during the ageing process. After a minimum of 6 months maturing Greensand Bray has a strong, creamy flavour.
